Thoughts, Shirley and a Recipe

I may have mentioned this before, but one of my favorite songs growing up was, "When I get to Heaven gonna walk with Jesus, when I get to Heaven gonna see His face, when I get to Heaven gonna talk with Jesus, saved by His wonderful grace!  Because I'm saved, saved, wonderfully saved, washed in the blood of the Lamb, Hallelujah! Saved, saved, wonderfully saved, and I'm so glad I am, Hallelujah!"
I still love it, and I think it really simplifies things for me.  I was reading over Matthew 5 this morning, the Beatitudes.  Jesus highlights the heart behind the Law.  He didn't come to abolish it but to fulfill it.  (Major paraphrasing there.)  I was kind of asking myself, how do I know if I'm trying to seek my own righteousness, or Christ's?  And I was reminded of my favorite verse, "Though you have not seen Him, you love Him.  Though you do not now see Him, you believe in Him and rejoice with joy inexpressible and full of glory, obtaining as the outcome of your faith, the salvation of your souls." (1 Peter 1:6-9)
It comes down to love.  When I love God I obey Him.  Just as when I truly love anyone, I sacrifice for them, I seek to please them.  And this is all based on His love for me first.  And all this is mine through faith by His grace!  So simple!  You know, until sin gets in the way.  But Jesus says, "Blessed are those who hunger and thirst for righteousness for they will be filled."  May we seek Jesus' righteousness all the time!

Shirley girly is going to be 17 months tomorrow, so I thought a little update is in order.  How she fills our lives with joy!  She is so full of personality.  Kwacha and I both grew up shy and quiet, but it's like God took our two personalities and canceled them out to create Shirley's!  She still says hi to everyone she sees and she loves to give kisses and hugs.  Especially "fish lip kissies" and "eskimo kissies!"  She has a newfound love for the park.  She just started going down the slide by herself and her favorite person to go with is Bren.   He calls her "Shirwee".  It's just super cute.
Of course, with all this personality comes a fair share of discipline!  She is very independent and strong-willed.  She definitely has whining down, especially when it's dinner time because she just wants more and more to eat!
She is learning a lot of new words and it's fun to see her say things that I didn't focus on teaching her. I taught her how to point to her eyes, ears, nose, mouth, etc.  But one day I asked her to show me her feet, which I had never asked her before, and she pointed to them; the same thing with her toe.  It's just amazing to see the things they pick up.
I just hope that one day, this spirited girl would pour her energy into the Lord and serving Him with her life.

Last thing I have today is a recipe for the most scrumptious, easy dessert!
I found the recipe on Pinterest from this site.

They are called "Flourless Peanut Butter Oatmeal Bars" and they are dangerously fast and easy to make.
I tweaked the recipe just a bit:

Ingredients:
1 cup creamy peanut butter
1/2 light brown sugar (or coconut sugar - I also added 1 packet of truvia since the recipe calls for a 3/4 cup)
1/2 tsp baking soda
1/8 tsp kosher salt
1 large egg (at room temp.)
1 tsp vanilla extract
2 tsp carob powder (or 1/2 semi-sweet chocolate chips)
1/3 cup old fashioned rolled oats (I used instant and it turned out fine)

Mix the first four ingredients until well-combined on medium, then add in the egg and vanilla and mix on medium-low.  Add in carob powder and stir in oats by hand.  Press into a greased 8x8 pan and bake in a 350 degree oven for 22 minutes.  Enjoy!  They are basically my new version of brownies!

Malawi!

As promised, here is a recap, mainly in pictures (and although there are a lot, I had to leave so many out!) of our time in Malawi. Well actually Kwacha is STILL there.

I will try to let the pictures do most of the talking.

First up, a lousy picture of downtown Lilongwe. I took it while driving through. This is very close to his sister's house whom we stayed with.

I didn't get any pictures of when we first got off the plane. I wanted to BUT....I fainted. Yes, fainted, two minutes after getting off the plane. Never fainted before in my life! I guess I was overcome by the beauty of Malawi.  Or it could have been a combo of being sick and very tired. 

Oh well, thankfully I felt much better after a shower.

The next morning we took a little trip over to ABC (African Bible College) where the Biedebach's live.  Below is the fun tree house in front of their house.

Brian was excited to show us his "new" old tire cover.  He traded a brand new one he had for this one with just the right acronym.

"Game" is a store from South Africa that has made it's way to Malawi.  It looks just like a Target or Walmart inside and has pretty much the same kind of products!

Spar is another store that hails from South Africa.  Kwacha's best friend, Kondi, is the one with the shopping cart.  This is, unfortuantely, the best picture I got of him.

And an outdoor market.  Yummy organic vegetables.

The next day we drove six hours north to Mzuzu to visit Kwacha's parents.  We had a beautiful drive up with many sights to see!

Below is a large brick oven.  Most villages have one of these.  They make bricks within these structures.  Apparently they will spend all night stoking the fire, then they put in the bricks and close up the holes for a week or two. (From what I remember.)

Finally in Mzuzu!

Below is one of my favorite pictures I saw at Kwacha's parents house.  So I took a picture of a picture.  :)  It's of Kwacha and all of his siblings.  The order in age, from oldest to youngest, starts in the bottom right and moves clockwise.  Chance, Granger, Jellita, Evelynn, Kwacha, and Malumbo.

I was able to meet all of his siblings, except Chance, who died about four years ago.

We spent the night at his parent's house and the next morning we took a short trip to Nkhata Bay, on the shore of Lake Malawi.  It was a breathtaking drive!

When we got back to Mzuzu, we saw cars lined up at the gas station.  That meant fuel was available!  This is actually a short line.  But by the time we got to the front, it was all gone.

That night, when we got back to Lilongwe, we had dinner at the Floreen's!  It was fun to see them in their nice home and enjoy sweet fellowship.  :)

The next day we took a trip to Lake Malawi.

On the way, we stopped at the Parliament building.  The Simwaka's have a cousin that works there.  ( He's on the left.) We actually sat in for a bit on a session.

Close to Parliament is a five star hotel that the Chinese built.  It's almost ready to open.

We passed a village and saw that it was market day.

We had lunch at a Sunbird resort.  Here you can see Lizard Island which is populated with large monitor lizards.

The local fish, chambo, and their staple food, nsima, at the very top.



Kwacha was a little sleepy.  Still fighting jet lag.

The next morning, our last morning, we visited a local village.  Kwacha and Kondi have visited there many times. 

On the way I snapped one of many pictures of a bike carrying a huge load of firewood!  I don't know how they do it.

We stopped by Kondi's house to say goodbye to his wife, Patricia, before we left for the airport.  They had us over for dinner one of the first night's we were there.  I really enjoyed their family!

Here is Kwacha with their oldest daughter, Karen.  This is right after we got her to say cheese.  I wasn't quick enough with my camera to catch a smile.  ;)  But isn't she so cute??

We had such a good time with Kwacha's family and all of the people we met there.  They are so kind.

Someday, you really ought to visit Malawi!  ;)

Pinteresting Wednesdays

I have had a serious lack-of-posting disease lately.  I just haven't had much to blog about. :(  It may also be due to the craziness of May!  Mother's Day, Emily's birthday, and wedding showers!  Every weekend seems to be busy lately and my wallet is empty from all those presents.  Next year, more sentimental gifts. 

I do have a few little projects I've been working on recently.  I may post some of those soon.  Jenn has encouraged me to dip into that "creative...pool...?"  Ha. She is so artistic! 

Well, to ease myself back into posting I will just do a little "pinterest-ing" for you. 

Here is what I have found recently:

I used to not even like gold jewelry, but in the last year or so, it has really grown on me.  And these are so fun!

I seriously wear my hair like this all the time now.  I felt "bun challenged" for years and now I finally feel that I have a grip on it.

I really want to try and ink drawing like this sometime soon.  I love the lines!  And it reminds me of Aslan of course!

Brick walls...oh brick walls I love you.

"Healthy" peanut butter cookies.  My favorite. Oh yes please!

Did you know quinoa (keen-wa) is a complete protein even though it's a grain??  And it's pretty tasty too, in my opinion.

And I think I may try this today.  So summery! So fun!
